Sauteed Chicken:

Dice 2-3 chicken breasts into 1” pieces and place in small bowl with enough marinade to cover the chicken. Marinate chicken breasts for at least 2 hours. Marinating overnight or longer is recommended for tastier results. Cut up 1 medium size onion, 1 green pepper and 1 tomato. In a large saute pan, add 2 tbsp olive oil and 1 tbsp butter. Add diced chicken and onion and cook for 3 minutes. Add green pepper and tomato and cook until chicken is cooked through and vegetables are tender. Add salt and pepper to taste. Serve with rice pilaf.

Chicken Kebabs:

Cut us as many chicken breasts as needed into 2” chunks. Place in large bowl and cover all of the chicken with enough marinade to coat each piece. Marinate chicken breasts for at least 2 hours. Marinating overnight or longer is recommended for tastier results. Cut up 2 onions, 2 green peppers and 2 tomatoes into large pieces. (you can use vegetables for this –  mushrooms and any peppers would be good). Get out your skewers and skewer the chicken, alternating the chicken with the different vegetables. Grill the kebabs until cooked through and serve with rice or any side dish of choice.

 Shrimp Kebabs:

Place peeled and de-veined large shrimp into bowl. Cover with enough marinade to coat each piece and refrigerate overnight for best flavor. Skewer the shrimp or simply place onto grill and cook for about 1 minute on each side. A squeeze of lemon brings out the flavor and is delicious!!

Chicken Legs and Thighs:

A wonderful thing to use up all that dark meat and it is so simple and tasty! In a large bowl, place chicken legs and thighs and cover with the marinade making sure each piece is coated with the marinade. Refrigerate overnight for best flavor. When you are ready to cook the chicken, preheat oven to 400 degrees. Place in shallow pan and bake the chicken for 45 minutes or until internal temperature reaches 165 degrees. Place chicken pieces on hot grill 3-4 minutes on each side basting with the marinade.

Pork Chops, Steak, Lamb Kebabs and as a Salad dressing

Leftovers:

Any leftover chicken is wonderful cut up for a salad, used as a panini sandwich with cheese and fresh basil, great on top of pasta with Alfredo sauce, pita sandwich with fresh lettuce and Ceasar dressing or simply eaten by itself for a quick snack!
